Istrian Belica - PDO
The varietal olive oil Istrian Belica is strong, distinguished by fresh fruity flavours and a more pronounced bitter and spicy taste.
The aroma of Istrian Belica, the indigenous most enduring and most oily olive variety, reminds of freshly mown grass, vegetables and olive leaves. Olive oil of Istrian Belica is distinguished by a higher content of beneficial polyphenols.
We recommend it for pasta, rice, poultry, red grilled meat, beef carpaccio, minestrones, vegetable soups and salads.

Cuvée - PDO
Extra virgin olive oil of Slovenian Istria is a combination of several varietal olive oils. In the foreground are the Istrian Belica,
Leccino and Maurino, a broad aroma is supported by some other olive oil varieties. The taste of olive oil is fresh and fruity, with pronounced bitterness and spiciness, and medium-intensive taste. The fruity aroma is very typical and
reminiscent of olives, apples and fresh grass. The bitterness and spiciness are in beautiful harmony and combine the taste of sweet almond. The oil is harmonious, with a broad aroma spectrum.
We recommend it for pasta, rice, red and white meat, fish, minestrones, vegetable soups and salads.

Blend
Olive oil is a blend of the most common Slovenian olive oil varieties,
the Istrian Belica and Leccino. The taste of olive oil is fresh and fruity, with emphasized bitterness and spiciness, and moderate. The typical fruity aroma is reminiscent of freshly mown grass. The bitter taste
and the spiciness are divided harmoniously.
We recommend it to pasta, rice, red and white meats, fish, minestras, vegetable soups and salads.

Leccino
The Tuscan variety Leccino is the most widespread variety in Slovenian Istria, right after the Istrian Belica. It yields slightly earlier
and is more resistant to frost and certain diseases. Extra virgin olive oil from the variety Leccino has medium mild flavour with a regulated bitterness and spiciness. It is distinguished by its harmony and likeability. For those who are less
accustomed to olive oil it will be an excellent entry into its world.

Maurino
Extra virgin olive oil is produced from the olive variety Maurino and has a milder taste and a softer aroma. The smell of Maurino olive
oil is reminiscent of cut grass, green apple and almond. It has the flavour of green apple and banana, and Mediterranean herbs.
We recommend it for pasta, rice, with white meat, fish, minestrones, vegetable soups and salads.

Lemon
By adding fresh lemons from organic production into oil during the process of olives, our varietal extra virgin olive oil gains a
more pronounced taste of lemons which you simply have to try.
We recommend it for rice, pasta, grilled vegetables and fruits, fish, salads and desserts.

Orange
Oranges from organic production with its sweetness and freshness are a perfect fit to our varietal organic olive oil.
The smell interlaces olive oil aroma with a delicate orange note.
We recommend it for poultry, duck breasts, shrimps, raw shrimps, lobster, salads, chocolate, ice cream, modern desserts and some pasta.

ROSe
The intense aroma of roses and its gentle sweet and fresh taste with a light spiciness perfectly combines with olive oil, accentuating its apple note.
It is used to flavour cold seafood dishes (such as shrimps), carpaccio, salads, chocolate, ice cream and modern desserts and other aromatic dishes.

GARLIC
The garlic from organic cultivation subtly complements our olive oil and additionally emphasizes the Mediterranean notes in dishes.

Truffle
To pure extra virgin olive oil we add the flavour of white truffle.
The oil still has the basic spicy olive oil taste with strong scent of white truffle.
We recommend it for hot dishes such as meat, pasta, risotto, or cold dishes such as carpaccio and all kinds of salads.

Chilli
We add the flavour of organic chilli to our varietal olive oil. Thus flavoured olive oil is spicy
and a mix of olive oil flavours and the spiciness of red peppers.
We recommend it as a spice for different traditional dishes, in the preparation of sauces and marinades, or as a table spice for salad dressing.

Olive liqueur
Olive liqueur is a speciality in our farm’s offer. It is produced exclusively
from olives from organic production, organic grape marc and added organic sugar. The sweet-bitter olive liqueur's harmonious taste is a soothing aperitif.

Olives in brine - pasteurized
Olives of the old Istrian variety Štorta, the most suitable Istrian olive variety
for preservation, are debittered in brine by a traditional procedure with unrefined salt from the Sečovlje salt pans. The olives have firm flesh and a pleasant taste. They are preserved in mild brine.
We serve them with cold cuts or use them in olive dishes.

Baked olives
Olives of the variety Leccino are harvested in their technological ripeness
and are debittered in unrefined salt from the Sečovlje salt pans. After the debittering process they are dehydrated in a furnace. The olives have an intense, slightly smoky flavour.
They are suitable as a side dish to dried meats.
